Not only is the easiest recipe I’ve ever found for Chocolate Chip Banana Muffins (one bowl, toss it all together kind of easy), it’s also the most delicious. This recipe makes 48 Mini Chocolate Chip Banana Muffins or 12 large muffins or one good sized loaf.
Mini Chocolate Chip Banana Muffins
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 ripe bananas
1/2 cup butter (room temperature)
2 eggs
1 cup chocolate chips
Heat oven to 350. Combine and mix all ingredients together in a large mixing bowl. Place batter in a greased bread pan (bottom only) or muffin tins. ( I spray my mini muffin pans with Pam). Bake mini-muffins for 12 minutes or until toothpick inserted comes out clean. Larger muffins will take approximately 25 minutes and a loaf will take 40 to 50 minutes. Remove from oven and let cool 10 minutes. Complete cooling on a wire rack.

Made these last evening. I followed the recipe exactly, except for 3 minor changes #1 I used mini chocolate chips, #2 I sprinkled additional mini chips on the top before baking and #3 I left them in for 14 minutes as another reviewer did. They were fantastic! My husband and 3 year old son gobbled them up! Although freezing them is a great idea, I’m not quite sure there will be any left to freeze, lol. Next time I double the recipe!!

I make these but add 1cup of mixed frozen leafy greens… blanched and blended and I call them hulk muffins so my son will eat them. Super hit.. oh and I leave out the chocolate chips when I make them hulk muffins.
