I’m a purist when it comes to ice cream. As few ingredients as possible are what make the best frozen treat. That’s why I’m such a fan of this Homemade Berry Ice Cream. Six simple ingredients, incredible taste!
During the summer months I pull out my ice cream maker and load up our freezer with homemade vanilla, chocolate, peanut butter cup and this berry ice cream. I love watching guests taste ice cream as it should be.
Berry Ice Cream
3/4 cup frozen strawberries, thawed and halved
2/3 cup frozen raspberries, thawed
1/2 cup sugar
Salt
2 cups heavy cream
1 cup milk
In a small saucepan, combine the strawberries, raspberries, 1/4 cup sugar and a pinch of salt. Bring to a simmer over medium heat, stirring, and cook until jam like, about 10 minutes. Let cool, cover and refrigerate until cold, about 1 hour. In a medium bowl, whisk together the cream, milk, remaining 1/4 cup sugar and another pinch of salt until the sugar is dissolved; cover and refrigerate for 1 hour. Using an ice cream machine, process the cream mixture according to your machine’s instructions. Fold in the chilled berry mixture to make a swirl pattern and then transfer to an airtight container. Freeze until firm, about 4 hours. Let sit for 15 minutes before serving. Warning: Do not attempt to eat all this on your own. Dangerous curves ahead if you get what I’m saying.

I am so totally going to make this — over and over again. We picked $40 worth of strawberries at the end of June and I didn’t make jam. Froze em instead. Total kitchen/mother fail. Wanting to be an ice cream purist instead of a jam-maker. : )
