There is no better time of year for me than tomato season, and nothing pairs better with tomatoes than bacon. Bacon and tomato sandwiches, pasta with bacon and tomatoes, bacon and tomato frittatas, and this Tomato Bacon Gruyere Tart are on regular rotation in my house every September. Bacon, by the way, is in rotation year round, and it’s always been Maple Leaf, because as a self-described bacon snob, it’s simply the best.

Tomato, Bacon and Gruyere Tart
This recipe is ridiculously easy to make, and takes next to no time to pull together. If you’re really crunched for time, you can use Maple Leaf Ready Crisp Bacon, and to really amp up the tomato flavour, I often use slow roasted tomatoes in my tart instead of fresh. Either way, I guarantee this recipe will become one of your go-to recipes. Once you know how to make it, you won’t even need to refer to the recipe. Enjoy!
Tomato, Bacon and Gruyere Tart
Ingredients
- 1 sheet puff pastry
- 2 large tomatoes, sliced
- 3 tbsps dijon mustard
- 8 slices Maple Leaf Bacon
- 2 cups Gruyere cheese
- 1 egg
Instructions

Prepare sheet pan with parchment paper and preheat oven to 400F.

Roll out puff pastry to 1/8" thickness.

Spread Dijon mustard over puff pastry, leaving 1" around edges to roll up.

Sprinkle 1 1/2 cups of Gruyere over puff pastry.

Sprinkle bacon on top of Gruyere cheese. Mmmmm bacon.

Spread tomato slices over top of Gruyere, overlapping slightly.

Sprinkle remaining 1/2 cup of Gruyere on top of tomatoes.

Prepare egg wash. Fold up outer edge of puff pastry, cutting slits every inch along edge. Brush with egg wash.

Bake 30 minutes in oven, until puff pastry lightly browned. Remove from oven and serve warm.
