I’ll have to admit that when the summer rolls around I tend to think that Indian food becomes a little too heavy for the season. I tend to think of all those rich, delicious sauces as comfort food and so in the past I deprived myself of amazing Indian food in the summer. That is until now. Meet my new best friend, Foil Pack Bombay Potatoes. These little babies are delicious hot or cold and make a great side with grilled tandoori chicken, or even with your hamburger. It’s called Mixing in a Little India for a reason, right?
Foil Pack Bombay Potatoes
2 lb bag of baby potatoes
2 tbsp of Patak’s Tikka Masala Paste
1 tbsp Patak’s Mango Chutney
8 shallots, skins removed
6 cloves of garlic
2 tbsp olive oil
1 tbsp butter
Salt & Pepper to taste
Pre-heat the grill to medium high (around 400F). In a bowl mix together all ingredients well. Lay out a piece of foil and butter inside of foil. Pour potato mixture into centre of foil and fold up sides and ends to make a packet. Place on grill over indirect heat and cook for 40-45 minutes until potatoes are soft and fluffy. Serve with your favourite main dish.
These potatoes are also EXCELLENT for camping. Prepare potatoes and place in foil pack. Store in cooler with ice pack until ready to cook. Place potatoes on grill or hot coals and whamo, you’ve just mixed in a little India in the great outdoors. Aren’t you smart?
