Ok, this is going to be a little longer than usual for a recipe post, but I feel it’s very important to convey just how delicious AND healthy this smoothie is. I’ve had this recipe pinned for about 6 months now and as you see below I was a little afraid of it.
But then July rolled along and a little peekity-boo at the calendar told me that there was only 32 days until Blogher, and I looked down at my love handles and oddly enough, I didn’t feel love towards them. It was time to pull out my Jillian Michaels DVD and lay off the sangria. *sob* And that’s how I ended up back at this smoothie which was posted by Iowa Mom Eats originally.
I gathered up all the ingredients I needed and my seven year old and I set about making it.
“This is going to be gross Ava. I’m seriously afraid.”
“Oh Mommy, this looks yucky”
“Okay kid, we’ll never know unless we try”
And then we tasted it…….
“This is really good”
“I can only taste banana and peanut butter Mommy”
“I know! I can’t taste a speck of spinach in this”
And then the angels sang on high. Okay, I’m kidding about the angels. What I’m not kidding about is this, I felt FAN-FREAKING-TASTIC all day. I had energy to burn and my 2 pm crash never came. Plus, I was getting a whole lotta greens at one sitting. Yup, I’m sold on the spinach smoothie.
Spinach Smoothie
1 frozen sliced banana
1 tablespoon peanut butter
1/2 cup 0% fat vanilla or plain Greek yogurt
1 cup unsweetened Vanilla Almond Milk, or skim milk or soy milk
4 cups baby spinach
Combine all ingredients in a blender and blend until smooth.
If you’re having a hard time getting past the green, put it in a dark glass or ask yourself, how great do you look in the morning?

I found my energy lagging about 6 weeks ago despite getting the right amount of sleep. I knew I needed to improve my diet as well. So back to a “greens” product I went – just put some in my smoothie every morning. What a difference it makes! Keep it going Candace!

I could probably get passed the spinach with yoghurt, but you lose me with the peanut butter and banana.

I do one with banana, apple (with peel), spinach, and water…tastes like apple! 🙂

The peanut butter kills it for me too. I might try it without that. 1 Tbsp probably doesn’t add that much protein??

I LOVE that you are only able to taste the banana and the peanut butter and NOT the spinach! That’s really the one thing I hate about the power smoothies!

I add spinach or kale to any smoothie – my usual is blueberry, spinach/kale, cran or apple juice, protein powder & yoghurt or milk or whatever. I like pb so will try this one.

I would LOVE to try this!!! Unfortunately yogurt (any type of probiotics or prebiotics) aren’t an option for us. Is there any substitute I can use for yogurt? (other dairy options are fine) Thanks!

Coincidentally, I’ve been making this one for the past few weeks, except mine includes kale as well. You can totally do it without peanut butter. You can also do protein powder, omit the pb and it tastes great.

I also make one with Spinach, Granny Smith Apple (with peel), an Orange, some ice and a little bit of water to help it blend. I really love it and find it a little more refreshing than one that includes yogurt and/or milk. 🙂

How many servings does this recipe make? I have a single serving blender and needed to know by how much to reduce the recipe.

Hi Stephanie, believe it or not this is 1 servin — it’s a large smoothie _ 🙂 Not sure if you’d fit 4 cups of spinach in a single serving blender though so you many want to cut the quantities in half.
