Super Simple and Delicious No Knead Bread

OK, sometimes the name of a recipe says it all, right? Like this Super Simple and Delicious No Knead Bread, it’s pretty self-explanatory. Honestly though, who doesn’t like super simple in their life? Also, as the name suggests it’s oh so yummy to eat. Win/win.

A friend passed along this recipe (thanks Arlene!), so I have no idea where it originates from. I can however tell you that baking bread is now a regular scent in my home. That’s how easy this bread is to make. You don’t have to tell anyone else how easy it is to make though. You can look like the hero *strategically smudges flour on nose*.

Super Simple and Delicious No-Knead Bread

Ingredients

  • 2 tbsps sugar
  • 2 tsps salt
  • 2 tbsps butter
  • 2 cups hot water
  • 2 ¼ tsp quick rising yeast
  • 3 cups of flour
  • ½ cup hemp hearts
  • ¼ cup molasses
  • 2 cups flour

Instructions

  1. Place the following 4 ingredients in the bowl of your stand mixer and mix with a spoon until the butter is melted. 2 tbsps sugar, 2 tsps salt, 2 tbsps butter, 2 cups hot water

Then add

  1. 2 ¼ tsp quick rising yeast
  2. 3 cups of flour
  3. Mix with the bread hook (just until the flour mixes with the water a bit – it can be all lumpy and stuff – maybe 30 seconds.)

Then add

  1. ½ cup hemp hearts
  2. ¼ cup molasses
  3. 2 cups flour
  4. Mix until a ball forms. Knead a few times on a floured surface (I avoid the mess and knead it directly in the bowl) approximately 15 times until nice and smooth. Hold the dough ball in one hand and add a bit of oil to coat the bowl. (Can you tell I don’t like to do dishes?) Place the dough ball into the greased bowl and cover with a tea towel in oven with the light on for one hour.
  5. Cut the dough ball into 4 equal pieces. Form into balls and plop into 2 greased bread pans (2 balls per pan). I often make one loaf and further divide the two remaining balls to make 9 buns that I bake in a square 8”X8” glass dish. Cover with your tea towel and place in the oven with the light on for 45 minutes. Remove the tea towel and turn oven to 400 degrees Fahrenheit and bake for approximately 25 minutes or until golden brown.
I have made this recipe with bread flour, unbleached flour, and multigrain bread flour. I’ve added flax meal instead of hemp hearts. I can’t seem to screw it up. So if you’ve been afraid to make bread for fear of failing, this will quickly become your go-to recipe. Besides, who doesn’t like a fresh bun to go with a Big Ass Pot ‘O Chili?
